  • Chicken, boneless cubed 1/2 kg
  • Yogurt 1/2 kg
  • Tandoori masala 4 tbsp
  • Ginger garlic paste 1½ tbsp
  • Oil 2 tbsp

For Seasoned Rice:

  • Rice 2 cups
  • Oil 2 tbsp
  • Red chili flakes ½ tsp
  • Garlic Chopped ½ tsp
  • Soya sauce 2 tbsp
  • Chili sauce 1 tbsp
  • Vinegar 1 tsp
  • Salt to taste

For Sautéed Veggies:

  • Oil 1 tsp
  • Chopped garlic ½ tsp
  • Red chili flakes ½ tsp
  • Shredded cabbage 1 cup
  • Capsicum chopped 1
  • Green onion chopped 1
  • Onion, cubed 1
  • Salt to taste

Sauce:

  • Mayonnaise 6 tbsp
  • Chili garlic sauce 4 tbsp
  • Milk 2 tbsp
  • Chopped coriander 2 tbsp
  • Charcoal pieces 1

Method:
For the tandoori chicken, marinate chicken with tandoori masala, ginger garlic paste, oil, and yogurt. Cook chicken until tender. Smoke with a piece of red-hot charcoal and a few drops of oil. Keep warm. Add 1 tablespoon oil to rice while still in a strainer and mix lightly. Heat the remaining 1 tablespoon of oil and fry garlic and red chili flakes. Add drained rice, soya sauce, and vinegar. Mix lightly. Pour 2 tablespoons of water into the rice. Cover and simmer for 5-7 minutes on low flame until steam rises. For sautéed veggies, in a pan heat oil and fry garlic and red chili flakes and add all vegetables and salt. Sauté for 2 minutes. Smoke with a piece of red-hot charcoal and a few drops of oil. For the sauce, mix chili garlic sauce, milk, coriander, and mayonnaise in a bowl and set aside. To assemble, in a greased large dish, spread a layer of hot rice. Now top it with tandoori chicken in the center and sautéed veggies on the sides. Spread the sauce and serve hot.
